Delicious wild garlic soup

Ingredients:

  • tuft of wild garlic
  • 1 chopped shallot
  • 2 parsnips – pre-baked in the oven
  • 1 TBS. of lemon juice
  • ½ – 1 cup of cashew cream
  • ½ litre of water or vegetable broth
  • pinch of nutmeg
  • Himalayan salt to taste
  • pepper to taste

 

 

 

 

Directions:

First, quickly fry the shallots in a sauce pan, add the sliced parsnips and pour water over them. Cook a little, then add the wild garlic leaves and cashew cream. Season everything and cook on low heat for about 10 minutes to soften. When the soup is cooked enough, blend until smooth. Garnish with roasted seeds if desired.
