Fluffy pancakes with coconut and oat flakes
Is there anything better for breakfast than delicious and fluffy pancakes?
Sweet, healthy and fulfilling.
Such pancakes can be prepared at home, without a lot of effort! All you need to do is mix all the ingredients together in a blender, and the preparation will not take more than 20 minutes of your time.
For a sweet surprise and crunchiness, top the pancakes with agave syrup and sprinkle them with Paleo Snack.
Ingredients
- 300g oat flakes (ground)
- 300g coconut milk (water + 2 tbs. of rice drink with coconut)
- 100g coconut chips
- 1 banana
- pinch of Himalayan salt
- 1 tsp. of cinnamon
- sweeten and top with agave syrup
- 2 tbs. of coconut cream
- 2 tsp. of baking powder
- coconut oil
- vanilla extract

Method
- Mix the dry ingredients together – oat flakes, baking powder, cinnamon, ground coconut chips and Himalayan salt. Add the wet ingredients – milk, agave syrup, mashed banana, a teaspoon of coconut oil, vanilla extract and coconut cream. Mix everything well to get a smooth lump-free mixture.
- Place pan over medium heat, add coconut oil and then a large tablespoon of the mass. When bubbles start to appear on the surface, turn the pancake over and bake for another 3 minutes.
- When the pancakes are ready, serve them with the desired topping – coconut cream, paleo snack and agave syrup.
