Plum pastry
Probably we’ve all been in a situation where we wanted to prepare a dish or pastry that would be suitable for people who are not allowed to eat a certain food, and at the same time make it tasty. More and more people are facing eating disorders and allergies, which cause us headaches when cooking and baking.
Today, we share with you a very simple recipe that is ready in 35 minutes. For this recipe we’ll use rice powder drink instead of regular cow’s milk, making the pastry suitable for all those who are experiencing lactose intolerance or other allergies to dairy products.
Rice drink powder is an increasingly popular substitute for cow’s milk. It’s great for anyone who has lactose intolerance or various allergies. Doesn’t contain added sugar, thickeners or artificial sweeteners. It can be used to make smoothies, desserts or morning cereals. We can also use it to prepare breakfast for our little ones.
The drink is organically produced and has all the necessary organic certificates. It’s a powder, so it will stay fresh for longer time and we don’t have to consume it in a couple of days as we have to do with other plant-based milks.

Recipe for plum pastry
Ingredients: for 10 people Preparation time: 35 minutes Ingredients:- 200g softened coconut oil
- 150g ground erythritol
- 1 pack of vanilla sugar
- 1 teaspoon of lemon zest
- 4 eggs
- 320g flour
- 1,2 dl milk or 12 g of the Bio rice drink powder
- 1 pack of baking powder
- 500 g fresh plums
Method:
- Take the coconut oil out of the fridge at least an hour before cooking to soften it.
- Wash and cut the plums, and remove the seeds.
- Preheat the oven to 180 degrees Celsius.
- Pre-line a deep baking tray or grease it well with oil.
- Using an electric mixer, mix the oil, sugar, vanilla sugar and lemon zest in a bowl. While mixing, gradually add the eggs and mix until you get a frothy and light mixture.
- Stir the Bio rice drink powder in water (1.2 dl) and add it to the mass. Mix everything well.
- Then, sift the flour and baking powder, and mix them well into the dough.
- Pour the mass into the baking tray and spread it evenly. Add the plums with the cut side facing up. Place the tray in the preheated oven for 25 minutes.
- When the pastry turns golden brown take it out of the oven.
- Let the pastry cool down and then cut it into pieces of any size. To make the pastry even more delicious, we suggest topping it with coconut chips.
