Optional: 1 tsp. of erythritol or coconut sugar, if you prefer sweeter pancakes. + some more of the plant-based drink.
Directions
Add the oat flakes and flax seeds to the blender and blend until they get a floury texture.
Then add all the other ingredients and blend again. A pancake batter will form.
For baking, use an anti-stick pan. Heat it to a medium temperature and when the pan is hot, with a ladle pour the pancake batter in the middle. Use the edge of a spoon form a round pancake. Bake on medium heat, 1.5-2 minutes on each side.
The batter will become denser over time as the dry ingredients absorb moisture. Halfway through baking, add a few more tbs. of the plant-based drink to dilute the battle.
Serve the pancakes with your favourite toppings – such as fresh fruit, hot chocolate topping or whipped cream.
